  • 3 lbs squash - yellow or green sliced extra thin
  • 1/2 cup onions chopped
  • 3 eggs beaten
  • 1/2 cup almond flour
  • 8 oz butter
  • 1/2 tbsp Swerve optional
  • 1 tsp Himalayan salt
  • 1 tsp black pepper
  • 4 oz grated mozzarella


  • Slice squash extra thin with mandolin
  • Place in bowl with onions, eggs, almond flour, butter, Swerve, salt and pepper.
  • Place in greased casserole dish (use coconut oil or butter).
  • Top with grated cheese
  • Bake in 350 oven for one hour.
