Ingredients

  • extra virgin olive oil to cover
  • Spices to taste
  • Salt pepper garlic powder, onion powder, smokey paprika
  • GENTLY Mix all above ingredients together.
  • 1 medium/large jicama peeled and cut into chunks
  • 3 eggs
  • 2 onions
  • 1 cup of oil
  • 1/2 cup almond flour
  • salt / pepper to taste




Instructions

  • Step One: Gently Mix The Ingredients
  • jicama sticks
  • GENTLY Mix all above ingredients together.
  • Step Two: Air Fryer
  • Add Mixture to Black & Decker Air Fryer
  • Set timer for 15 minutes
  • When the bell rings dig in.
  • Tastes incredible.
  • Preheat oven to 475 degrees
  • Blend all ingredients together.
  • Pour into a 9 inch pan.
  • Bake at 475 for 15 minutes.
  • After 15 minutes lower the temperature to 450 and bake for 15 minutes.
  • After 15 minutes lower the temperature to 425 and bake for 15 minutes.
  • It will be crispy on the top and moist on the bottom.

Notes

A potato kugel (pudding) is a staple in Jewish homes. Ground potatoes and onion. Salt. And lots of healthy fats. Sadly, potato is super high carb. Now along comes jicama. Many people have never heard of it. But with a little bit of finesse, you have a potato kugel. This was my own invention. You won’t find it anywhere else. Until someone steals it and claims it’s really them in the video. Hey, it happens. Serves 12-16 pieces.
