Ingredients
  

  • Avocado oil or Olive oil or Coconut oil for frying in fryer
  • 16 Thin slices of boneless chicken breast
  • 4 Eggs
  • 1 tsp salt
  • 1/4 Tsp black pepper
  • 4-6 cups Almond Meal
  • Big tablespoon of Nathan’s Mustard

Instructions
 

  • Using a large bowl combine eggs, mustard, salt and pepper and mix
  • Toss chicken breasts inside the mix and let sit for a few minutes
  • Using a large flat plate with the almond meal, dip one piece of chicken at a time on each side
  • Heat up oil in fryer
  • Place in the fryer until lightly golden
  • Serve on a bed of greens or a fresh salad
