Ingredients
  

  • 8 Zucchini
  • Chunky Tomato Sauce:
  • 1 Large onion chopped very small
  • 6 Cloves garlic minced
  • 1/4 Tsp smoked paprika
  • 3 Tomatoes chopped up in small cubes chopped up in small cubes
  • 1 bunch fresh basil finely chopped
  • 12 oz tomato paste no sugar added
  • 1 Cup water
  • 2 Tsp Swerve
  • 1 Tbs Pink Himalayan Salt
  • 2 Tsp black pepper
  • 5 Tbs olive oil mild

Instructions
 

  • Wash and dry zucchini
  • Using a Zoodle Maker, create any size zoodle you prefer and set aside
  • In a medium-size saucepan saute onions for 5 minutes in olive oil on medium-high
  • Reduce heat to medium-low
  • Add minced garlic and stir 2 minutes
  • Toss in cubed tomatoes and cook 5 more minutes
  • Pour tomato paste, water and swerve into the pan and stir while cooking 2 more minutes
  • Add basil, paprika, pepper, and salt and cook for 10 minutes covered
  • Keep Warm until ready to serve
  • Heat up the Zoodles for 45 seconds in a microwave safe plate
  • Serve the sauce warm over Zoodles and enjoy!
